Owner & Chef
Jamie Male

Working alongside Crystal is resident owner and chef Jamie, who designs every menu to ensure consistency and excellence. With decades of experience in some of Melbourne’s best-known establishments — including Sofitel, Mietta’s, Donovan’s, Adelphi and O’Connell’s — Jamie brings over 30 years of seafood expertise, giving guests complete confidence that they are in very good hands.

Crystal McCoist

Joining Scales from sunny Cairns, Crystal brings a wealth of seafood knowledge and experience. She previously led the kitchen as Head Chef at the well-known Splash Seafood Restaurant, where she built a strong reputation for quality, freshness and flavour-driven seafood dining.
